阿里山高山茶慣稱為「台灣高山茶」,所生產製作的茶葉其特色為部份發酵茶，因為高山氣候涼冷，早晚雲霧籠罩，平均日照短，茶樹芽葉含兒茶素類等苦澀成分降低，而茶胺酸及可溶氮等對甘味有貢獻之成份含量提高，且芽葉柔軟、葉肉厚、果膠質含量高，因此阿里山高山茶色澤翠綠鮮活，滋味醇厚，喉韻強勁，香氣淡雅持久，水色蜜綠顯黃及耐沖泡等特色。
 
Alishan high mountain tea produced is characterized as partially fermented tea. Because of the cool and cold high mountain climate, it is covered by clouds and mist in the morning and evening, and the average sunshine is short, its leaves contain less bitter and astringent components such as catechins, while theanine and soluble nitrogen contribute to the increase in sweetness. Alishan mountain tea has a green and fresh color. It is lively, full-bodied, elegant and long lasting fragrance.
